1. Look at the "headband" this is the place where the pages meet the spine. A headband can be hand sewn, glued, or some combination of both. It's where the skill of the bookbinder really shows. Is it neat? Does it seem durable? Do you like how it looks?
2. Look at the spine. Spines can be flat, rounded, they may feature sewing in some styles.

3. Consider the quality of the materials. Expensive isn't always better, but how well do the materials work together? Do the end papers match the cover? Are there end papers?
Of course with something like a blank hand bound journal what matters most is that you like it and it's functional. These are just ways to check that your first impression will be a lasting one.
Always think "how might this start to come apart?" (given how you will use the book.)
