This is easy: Jerry Pinkney
Because I know he can draw ants and I'd want to have ants in the portrait. Also, he's work just blows me away.

I'm trying to think of other artists who I *know* can draw ants...
I know who can't draw ants.. Dali. Terrible ants.
MC Escher is good though.
