The logistics of that in real life would be insane.
You're willingly using your coliseum as a mold to cast a single large rock and then what? Your delivery pipes are all solidly filled with stone, your fountains--clogged with stone, your floor--covered in several feet thick stone ensconcing bodies, weapons, bridges, etc. The smell would be horrible, the heat unbearable for many of the observers, and your victor is just gonna have to stand in the middle and wait for several days before he can leave.
So what do you do if you want to play again? Build another entire coliseum or chisel out the old one?
